Hi Judy, glad to know you read my blog, and I wouldn't have known about your blog if you hadn't commented! Now I can look at your pretty photos. This squash looks lovely, but I have never cooked one. Maybe they are eaten raw in salads? I'll have to learn something!
We usually just boil them up with onion and butter, but they're good in casseroles too. The one in the photo is really too large to eat. It was hiding in the squash leaves and didn't get picked soon enough. They can get a bit bitter and tough if they get too big. I just liked the shape of this one and couldn't resist taking a photo.
